Not every judge on "American Idol" wants to shoot Mariah Carey (yet) ... the diva had dinner last night in the Valley with the dawg himself, Randy Jackson.

Fun Fact: Randy and Mariah actually go waaaaaaay back -- Randy has served as her musical director for a number of her tours throughout the years.
